Turkey Meatloaf!


OK so I love meatloaf sandwiches. It may be one of my favorites. It may also just be an excuse to eat mass amounts of meatloaf masked in sandwich form. I've seen recipes online and every time I've tried them they've been horrible. I've written my own and I've proven it's delicious. Let's get started.

What you need:

  1. Turkey (one normal sized package from the store - please be conscious and buy organic). Also don't buy 99% fat free because you need some fat content or it will bake like a brick. 8% fat is OK.
  2. One onion, 2 celery stalks, a few garlic cloves. (I added a red pepper for heat because I had one in my fridge but that's obviously optional).
  3. 2 cups of Breadcrumbs (make your own with toast or just buy a package)
  4. 1 egg

Follow these steps:
  1. Dice the onion, celery, and garlic into fine little pieces and cook in a pan until relatively mushy and mixed well. Add salt and pepper to taste. And when I say "to taste" I mean taste it!
  2. While your onion mix is cooking, mix your turkey in a bowl with an egg, breadcrumbs, and about a tablespoon of salt and half a teaspoon of pepper.
  3. Once your onion mix is cooked, mix it in thoroughly with the turkey mix until everything is combined evenly.
  4. Important: you have a hot pan in front of you already - - make a mini patty of your turkey mix and cook it. If it doesn't taste very flavorful then most likely you need salt or something else. It would suck if your entire loaf didn't taste very good, wouldn't it?
  5. Once it tastes the way you want (like a super good turkey burger), form it in a pan lined with foil and make sure the shape is uniform and loaf-like. It should look like this:

  1. Drizzle a little olive oil over the top and cook the loaf at 375 degrees for 60 minutes.
  2. Once it's cooked, take it out, put some ketchup over the top, and put it back in the oven to warm the ketchup (the oven should be off).
  3. Make a sandwich!

Oh you have no idea how much I love gravy. I make gravy when I have actually no excuse to. My middle name is actually "Roux" and my favorite joke is "yo mama's so fat when she cut her leg gravy came out"
