Baked Chile Relleno
The Chile Relleno is a very simple, healthy and delicious dish to make at home. The kinds in mexican restaurants aren't actually to my liking, even though I adore deep-fried things stuffed with cheese. I just find them way too greasy and overbearing in restaurants.
While waiting, prepare your filling by cooking the mixture together in a pan. You can mix sausage, chorizo, soyrizo, chicken, cheese, soy cheese, vegetables, etc - whatever you want your filling to be.
Once your peppers have steamed and you've peeled off the skin that you can (it doesn't always all peel off), carefully remove the seeds inside by making a slit in the pepper. You can also just take off the stem. You'll typically see them in restaurants for show but I have a hard time stuffing the pepper without losing the stem anyway. Then stuff it with your filling and bake another 15-20 minutes at 350 degrees to heat everything up together.
Once you're finished, plate it with any type of sauce you want; mexican crema, sour cream, guacamole, cilantro, etc.

dude my chiles NEVER look this good when i try roasting or grilling them.
i'll get another batch at the farmer's market if they are still there, and try this recipe WORD FOR WORD!
I use the broiler because I don't have an outdoor grill because I DON'T HAVE AN OUTDOORS. ugh. Poo.
I just leave them in the broiler until they're charred and then I flip them to char on the other side.
